Abstract. Currently, many types of food are forgotten. The article provides historical data about the “Waqf” document for the mausoleum of Amir Temir, Khoja Akhmet Yasawi and specially prepared food “Alim Aba”. In addition, mention is made of units of measurement and additives added to food. The data from the Waqf documents in the museum archives was compared and analyzed with information from scientific works on the topic. A general account of the grain allocated for cooking during the campaign by the population engaged in agriculture on the banks of the Syr Darya River was compiled. The scientific work describes the Turkic tradition of cooking and baking bread "Khalim Aba", which was intended for religious citizens of different social classes. The purpose of the article is to introduce new data on Waqf and Halim Aba into scientific circulation.
According to a legend common among the local population, the dish "Khalim aba" is prepared from seven types of wheat grains and seven types of meat. The local sedentary population planted all types of wheat, and each time they came to the mausoleum, everyone brought their produce, cattle breeders - their cattle, and hunters - game. On Fridays before noon, a special dish called "Khalim" was prepared, which was distributed to believers after Friday prayer, later it was served to the poor and pilgrims along with a loaf of bread.
